Jamie grew up in a small town in Missouri on the Mississippi river, where he began cooking at an early age for family, friends and alongside his Italian Grandmother. In 2009 Jamie opened Satchmo’s BBQ & Cajun in 200sqft drive-thru and walk-up location. Shortly after being launched, Satchmo’s began to gain local and regional attention. AZ Highways -Best New Restaurants, LA Times Weekly, Southern Living Magazines BBQ Bucket List, Best Chefs America, and multiple Best of Flagstaff Awards just to name a few. With demand for Satchmo’s growing at an accelerated rate, Jamie decided to spin off the 2 additional concepts. In 2015 & 2016 he launched the Grand Canyon Spice & Food Co (GCS) along with ROUX66 Catering & Events. GCS now handles blending & smoking of all rubs and seasonings for Satchmo’s & retail along with specialty small craft blends for ROUX66. Utilizing many newly created spices and foods from GCS, ROUX66 covers the gamut for styles, cuisines and services. Offering everything from Pop-Ups to mobile catering services, ROUX66 has helped evolve his trinity of culinary concepts while allowing more freedom to create great food and great experiences.
